Mini Pecan Pie Muffins

This recipe is a Hit! For Mini Pecan Pie Muffins are Great Teat in all occasions .. i kept Making them over and over again , sharing them with Family members! 





Ingredients:


1     Cup packed brown sugar
1/2  Cup all-purpose flour
1     Cup chopped pecans
11   TBS butter, melted
2      Eggs, lightly beaten

Steps:

1- In a large bowl, combine the brown sugar, flour and pecans; set aside. Combine butter and eggs. Stir into brown sugar mixture.

2- Fill greased and floured miniature muffin cups two-thirds full.

3- Bake at 350° for 22-25 minutes or until a toothpick inserted near the center comes out clean. Immediately remove from pans to wire racks to cool. 



P.S : This recipe uses only 1/2 cup flour.

Almond Roca

Almond Roca is a brand of chocolate toffee butter crunch candy containing a ground almond coating and also almond chunks inside the candy itself.
in this ADDICTING favorite Home made Almond Roca recipe you will NOT need a candy thermometer!

Ingredients:



6/4 Cup chopped and toasted almonds (unsalted natural almonds)
1 cup packed light brown sugar
1 cup (2 sticks) salted butter
4 bars of chocolate (such as Hershey's Bars)

Steps:

1- Butter a 7x11-inch pan (or 9x12 for slightly thinner roca). Sprinkle 1 cup of toasted almonds on bottom of the pan.

2- In heavy saucepan at medium-high heat melt butter and add brown sugar. Stir until gently boiling. Reduce heat to medium or medium-low and boil 12 minutes exactly,
 stirring constantly.
I made mine without a candy thermometer with success, but if you have one and you think you rather use it you might wish to stick and instant read thermometer in there just to make sure 
it's about the right temperature. Pull it off the heat when it has reached the hard-crack stage (300 degrees F)- if it gets higher than 320, it will not remain solid.

3- Remove the mixture from heat, give it a good stir to mix up that butter and sugar one more time, and immediately pour hot mixture into pan over almonds. 

4- in pan boil some water and put other bowl with chocolate in to to melt it .

5- Once your Chocolate is completely melted pour it over your caramel and almonds first layer 
and spread it to every corner , then Sprinkle with remaining toasted almonds and gently press them into the chocolate.

6- Cool completely, and then break apart into chunks with a sharp knife. Store in a covered container & put it in the fridge.

Cherry Pie

Very popular dessert in North America , The Cherry pie was most commonly eaten in midsummer, you can always control the sweetness in The recipe .Enjoy!

Ingredients:

2 Cans of "Food-Club Cherry pie Filling"
1 TBS Almond extract 

Or for preparing the Cherries yourself You need :

 2         Cups pitted sour cherries
 1&1/4 Cups white sugar
 10       Teaspoons cornstarch
 1         TBS butter
 1/4      Teaspoon almond extract 

Pie Crust Dough 

Steps:

1- Roll out  disk of dough into a 11-inch circle pie pan with pastry.

2- Place the cherries, sugar, and cornstarch in a medium-sized non-aluminum saucepan. Allow the mixture to stand for 10 minutes, or until the sugar draws out the cherries' juices. Bring to a boil over medium heat, stirring constantly. Lower the heat; simmer for 1 minute, or until the juices thicken and become translucent. Remove pan from heat, and stir in butter and almond extract. Allow the filling to cool to lukewarm. Pour the filling into the pie shell.
(If it's the Food club cherry pie filling Cans stir them with more sugar if you desire more sweetness otherwise they are ready to use after adding the Almond extract).
3- Bake in a preheated 375 degree F (190 degree C) oven on the baking tray for 45 to 55 minutes, or until the crust is golden brown. Allow to cool for several hours before slicing.

Blueberry Cake


This Yummy & nice tender cake is one of my Mother-in-Law's specialties every Blueberry Season.



Ingredients:


2            Cups fresh Blueberries 
1& 1/2   Cups Sugar , Divided
1/2         Cup  Chopped Pecans
1            Cup Butter (in room temperature)
1            Teaspoon vanilla extract
2             Eggs
2&1/2    Cups self-rising Flour
1/8         Teaspoon Cinnamon
1             Cup Sour cream

Glaze:

1                  Cup Confectioners Sugar
1&1/2  to 2 TBS water or Milk
1/4                Teaspoon Vanilla

Steps:


1- Preheat the Oven to 350 degrees , grease and lightly Flour a 9x13x2inch Baking Pan.

2- In bowl combine the berries with 1/4 Cup Sugar and the Pecans , Mix well and set aside .

3- Cream the remaining 1& 1/4 Cups Sugar with the butter and the Vanilla extract , Add the Eggs one at the time , Beating well after each addition.

4-  Combine the Flour and the cinnamon , add to the Creamed Mixture alternately with the Sour Cream .

5- In the Pan Spread about 1/2 of the Creamed mixture , then spoon the Blueberries filling Mixture over it ,and Drop the remaining Creamed batter over it and spread it to cover the blueberries , sugar and Pecans filling . ( don't worry , if a few berries show through.)


6- Bake for 40 to 45 min or until toothpick comes out clean when inserted near the center of the Cake .

7- Combine all Glaze Ingredients , Beat until smooth , and Spread on your Cake .

Madeleine


French Yummy cake ever!

Ingredients:


1      One Orange Zest 
6      TBS Butter
2       Eggs 
6       TBS Flour 
1       Tea spoon Baking Powder
1/2    Cup Sugar
          pinch of Salt 

Steps:

1- Mix the Eggs , the Sugar   well then add the Butter , the Baking Powder and the Flour 

add the Orange zest and the salt at the last and Mix Again.

2- Bake at Preheated Oven 350 degrees F till Golden 

let it cool & enjoy 

Option : you can make it as Cup-Cakes and pour any 1/2 little spoon of a Jam of your choice inside each Cup Then Bake .

chocolate Roll-cake


In fact i tried many roll-cakes recipes but none was as perfect as this one i just keep doing it over and over again it is so moist and delicious .



Ingredients :





for the cake :
6 eggs 
10 Tbs flour 
10 Tbs Sugar
3Tbs cocoa Powder
2Tbs milk
2Tea spoon baking powder
2 Tea spoon vanilla extract

 for the syrup :

1/2 Cup Sugar
1/2 Cup water 
2 Tea spoon Vanilla extract

pour the ingredients in a pan and bring to Boil for 15 min 

for the Cream :

500ml chilled whipped Cream
3Tbs   powdered Sugar 


Steps :

1- Separate whites and Yolks 
wisk the Yolks and Sugar very well add milk and Cocoa powder then add the Sifted Flour and the baking powder
2- Beat the egg whites until firm with pinch of salt or Tartar
Stir preparation N2 with preparation N1 gently 
3-pour into into buttered Pan (12x17) with non-stick cooking sheet and Bake in Preheated Oven 360 degree F for 35 Min.
in the mean time:
4- prepare the whipped Cream :  whip the Cream well chilled in a very Cold Bowl add the powdered Sugar once the cream start the thicken add vanilla extract ( or melted chocolate) .
5- Assemble the cake after u get the cake out from the oven let it cool bit then pour the Syrup slowly on all of it then roll it slowly to not brake it and to prepare it shape. 
6-unroll the cake spread a layer of the whipped Cream and Roll it then cover with cream and decorate as you like .
put at least for 2 hours in the freezer before serving .
