Sausage Pasta

It is been long time that i didn't Post any of the New recipes .. the other day i tried this Creamy sausage Pasta it is simply Delicious and satisfying.





Ingredients:


8 Ounces Penne Pasta or any other Kind of Pasta you Like 
Sausage of your Choice
1/2 Cup Heavy Cream
2 Cups Vegetable or Chicken stock ( I used vegetable Stock)
1/2 Can tomato sauce 
1 cup mozzarella Cheese 
1 Tablespoon Olive oil 

Steps:

1 - Cook pasta in large pot of boiling water , after it is fully Cooked Drain it .

 2 - Heat oil in a heavy skillet over medium heat Then Add sausage and Cook until sausage is no longer pink, stirring frequently, about 7 minutes.

3 - Add tomatoes, cream, and salt , Simmer until mixture thickens slightly, about 4 minutes Then add the Mozzarella.

4 - Bring sauce to a simmer.

5 - Add pasta to sauce and cook until pasta is heated through and sauce thickens, stirring occasionally, about 2 minutes.

6 - Sprinkle with parsley , and Serve .

Italian Chicken Pastina

This Pasta Dish is really Good , I got the recipe online and it was the first Chicken pasta dish that i found really nice , i add some spices to it and i skipped using the Bread Crumbs .




Ingredients:



1 Cup Pastina pasta (or any small pasta) 
2 Tablespoons olive oil
1 Cup cubed chicken breast 
1 Clove garlic, minced
1 Can diced Flavored tomatoes with juice 
1 Cup shredded mozzarella
1/4 Cup chopped fresh flat-leaf parsley
1/4 Teaspoon  salt
1/4 Teaspoon freshly ground black pepper
1/8 Teaspoon ground ginger 
1/4 Teaspoon of paprika
1/4 Cup cheese mix
1/4 Cup grated Parmesan
1 Tablespoon butter, plus more for buttering the baking dish

 Steps:

1- Preheat the oven to 400 degrees F.

2- Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook until just tender, stirring occasionally, about 5 minutes. Drain pasta into a large mixing bowl.

3- Meanwhile, put the olive oil in a medium saute pan over medium heat. Add the chicken and cook for 3 minutes. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more. Put the chicken mixture into the bowl with the cooked pasta. Add the canned tomatoes, mozzarella cheese, parsley, salt, ginger, paprika and pepper. Stir to combine. Place the mixture in a buttered 8 by 8 by 2-inch baking dish. In a small bowl mix together the cheese mix and the Parmesan cheese. Sprinkle over the top of the pasta mixture. Dot the top with small bits of butter. Bake until the top is golden brown, about 30 minutes.

Pasta with Italian Meatballs

Nothing better than those Classic Italian-American style meatballs, huge, pillowy soft and loaded with herbs and cheese, mixed with ground beef on your pasta Dish with savory tomato Sauce.


Ingredients:

For ten Meatballs:

1/2 Pound ground beef 
3   TBS Ground Bread Crums 
1/3Cup grated parmesan cheese
1   Small Egg
1   Teaspoons salt
1/2Teaspoon Black pepper
1   TBS chopped fresh parsley
2   Teaspoons black pepper
1   TBS chopped Onion 
1   Small Garlic clove, minced
About 1/2 cup of flour for dusting
1/4 cup olive oil.

For the Tomato Sauce:

1  Can tomato Sauce 
1  Clove Garlic Minced
1  TBS Basil finally Chopped
1  Teaspoon Salt 
1   Pinch of Black Pepper

Steps:

1- In a large bowl, combine the beef, grated Parmesan, eggs, salt & Black Pepper, parsley,  black pepper, garlic cloves , Onion and the bread . Mix it well with your hands until it barely combines. Don't overwork the mixture or it will become tough.

It is OK to have some discernable bits of bread or meat in the mix, better that than overworked meatballs. 

2- Wet your hands and form the meatballs. A traditional size for this sort of meatball is 2-3 inches across, but you can make them any size you want. Once you roll the meatball in your hands, roll it in the flour to give it a good coating. Set each one on a baking sheet as you work. You might need to rinse your hands a few times as you make the meatballs.

3- When all the meatballs are formed, heat olive oil in a large skillet over medium-high heat. Brown the meatballs on at least two sides. & Don't worry about the center getting cooked through, as you will finish these in the sauce.

4- Once all the meatballs are browned, remove them and Put the minced Garlic in the remaining Oil of the meat balls , once cooked little bit pour the tomato Sauce and let thicken little bit then add the Basil and the meatballs , Salt and black Pepper to taste and Cover ,let simmer on low heat for 15 more min.

5- Serve on pasta, and garnish with some cheese and green onion if you want.

Pastitsio

Pastisio is a bit like Lasagna or Sheppard pie...only a Greek version , this recipe is based on Ina Garten's one.




Ingredients:

1-for the tomato Meat Sauce : 

1    TBS Olive Oil
1/2 Cup yellow Onion 
1/2 Pound Ground Beef 
1    Minced garlic 
1/4 Teaspoon ground Cinnamon
1     Teaspoon dried Oregano
1/2  Teaspoon fresh thyme leaves  
1     Pinch of cayenne pepper 
1    Can of tomato puree
salt and freshly ground black pepper

2- For the bechamel Sauce:

1     Cup whole Milk
2     TBS unsalted Butter
1/4  Cup all- purpose Flour 
1/4  Teaspoon ground nut-meg
1/3  Cup grated Parmesan + 3/4 Cups for Toping
1      Egg
1/3   Greek style Yogurt
Salt and Pepper to Taste 

3      Cups small shells Pasta ( Cooked and Drained )

Steps:

1-For the sauce, heat the olive oil over medium-high heat in a large pot. Add the onion and saute for 5 minutes. Add the beef, and saute over medium heat for 8 to 10 minutes, until it's no longer pink, crumbling it with the back of wooden spoon. Drain off any excess liquid, Add the garlic, cinnamon, oregano, thyme, and cayenne, and continue cooking over medium heat for 5 minutes. Add the Tomato Puree, 2 teaspoons salt, and 1 teaspoon pepper and simmer, stirring occasionally, for 30 minutes. Set aside.

2- Preheat the Oven  to 350 degrees F

3-For the bechamel, heat the milk in a small saucepan over medium-low heat until simmering. In a medium saucepan, melt the butter. Add the flour and cook over medium heat, whisking constantly for 2 minutes. Pour the warm milk a into the butter and flour mixture, whisking constantly. Continue cooking, stirring occasionally, over medium heat for 5 to 7 minutes, until smooth and thick. Add the nutmeg, 1 teaspoon salt, and 1 teaspoon of pepper. Stir in 1/3 cup of Parmesan cheese, 1/2 cup of the tomato and meat sauce, and allow to cool for 10 minutes. Stir in the eggs and yogurt and set aside.

4-Add the pasta to the meat and Tomato Sauce, and pour the mixture into a Baking dish. Spread the bechamel evenly to cover the pasta and sprinkle with the remaining 3/4 cup Parmesan cheese. Bake for 1 hour, until golden brown and bubbly. Set aside for 10 minutes and serve hot.

Tuscan Chicken Pasta

 this recipe it's very Good for chicken pasta







Ingredients:



for 2 servings:
2         Cups Pasta ( Rigatoni ) or the one of your choice 
1         Chicken breasts cut in cubes 
2         Tbs  frego roasted Garlic Parmesan Sauce 
1/4      Cup water
1/4      Copped Onion
1         Small chopped Yellow  bell pepper 
1         Small chopped red bell pepper 
1/2      Cup mushrooms
1/2      Cup fresh chopped spinach
4         Diced Cherry Tomatoes 
1         Tea spoon Tuscan seasoning 
1         Table spoon olive oil
           salt & pepper  to taste .

Steps :

1- boil pasta for 15 min 
2- in a pan pour the olive oil add the onion then the chicken cubes 
3- add the chopped yellow bell pepper  and the red bell pepper and the mushrooms also the tomatoes 
4- add the tuscan seasoning & the 1/4 Cup water.
cover for 10 min on medium heat 
5- uncover the pan and add the Frego roasted Garlic Parmesan Sauce
6- add the salt and pepper and stir to mix the Sauce very well
7- bring to boil .
8-  pour the pasta on the sauce pan & mix well together .
serve Hot with Salad .

Cream Cheese lasagna


Spicy and creamy recipe
 to enjoy on dinners.






Ingredients :

1/2 lb  Ground Beef 
1/2      Cup Chopped Onion 
1         Can Tomato Sauce 
1/2      Can tomato Paste 
1/4      Cup water 
1         TBS Parsley 
1/4      Tea Spoon dried or Fresh Rosemary 
1/4      Tea Spoon dried Thyme 
1/4      Tea Spoon nut meg 
1/2      Tea Spoon Oregano
1         Tea Spoon Salt 
1/2      Tea Spoon black pepper  
1         Garlic 
1/2      Pak Cream Cheese 
1/2      Cup Parmesan 
1/4      Cup Sour cream 
1         Egg  
1         Cup shredded Mozzarella 
2         Cup chopped spinach 
1         Cup  Mushrooms 
1         Box uncooked Lasagna 

Steps :

1- Preheat the Oven on 375 degrees F .2-Cook the beef , the Onion , Garlic and the mushrooms add salt pepper to taste .3-Cook the Tomato sauce , Tomato Paste , parsley , rosemary , thyme , nut meg , Oregano , add salt and pepper to taste .4-Combine the Cream cheese , Parmesan , sour cream , Egg , Spinach and add salt and pepper to taste .5- put layers of each Mixture and layers of lasagna 6- pour the tomato Sauce left on and put on the Top to finish a layer of the Mozzarella 7- cover with aluminum foil and bake for 1 hour then uncover and Bake for an other 15 minAfter it is Done let it set for 10 min before serving .

Macaroni & Cheese


This recipe is my Favorite as it is so creamy and Tasty Also it is easy to make.







Ingredients:


2     Cups Uncooked elbow Macaroni 
1/2  Cup Fat free Sour Cream 
2     Cups Fat free Skim Milk 
2     Tbs Finely Chopped Onion 
3     Tbs All purpose Flour 
1     Tsp Yellow Mustard 
1/2  Tea spoon Salt 
1/4  Tea spoon Cayenne red Pepper 
1/4  Tea spoon Black Pepper
2     Cups Shredded sharp Cheddar Cheese 

Steps:

1-Cook and Drain Macaroni then stir in Sour Cream and Cover to keep Warm
2- heat the Oven for 250 degrees F
3- Stir onion in some Butter add flour Stir again then add the Skim Milk ans Mustard + Salt & Black Pepper Keep Stir Till it thicken then add Cayenne red Pepper 
4- bring to Boil then stir in the Cheese till all melt and Mix together 
5- Pour in a baking Pan for 20 to 25 Min until edges are Bubbly .

Option : you can sprinkle with little Paprika before Baking
