Indian Creamy Grilled Chicken Kebabs

These Creamy Kebabs are Traditionally cooked in a Tandoor Oven In rural Villages in northern India and in restaurants , But still Grilling or Broiling is also giving it Great result. 





Ingredients:


Boneless Skinless Chicken Breasts or Turkey Breasts  Cut into big strips .
1/4 Cup Yogurt 
1    Tablespoon Ground Coriander
1    Tablespoon Finally Chopped ginger root
1    Tablespoon Chopped Fresh Cilantro 
1    Teaspoon Ground Cumin 
2    Medium Cloves garlic , finally Chopped 
1/2Salt 
1/2Teaspoon Ground Pepper  ( Cayenne )
1/2Garam Masaala 
6 or more Bamboo Sticks or metal 

For Mint - Cilantro Chutney:

1   Cup Chopped Fresh Cilantro 

1   Medium Tomato Chopped 
3/4Cup Chopped fresh mint Leaves 
1/2 Medium Onion Chopped  
1/4 Cup water 
Juice of 1 or 2 medium Limes 
1   Teaspoon Salt 
2   Garlic Cloves 
1   Thai , Serrano or cayenne Chilies.

Place all ingredients in Blender , Cover and blend on medium Speed until smooth 
Cover tightly and Store in refrigerator up to 10 Days.


Steps:

1- Mix all ingredients in medium Bowl , Cover and refrigerate at least 2 Hours but no longer than 24 hours , After that you Arrange then into the skewers.


2- On Heated Coals or Gas Grill Place your Skewers on medium Heat .

3- Cover and Grill kebabs on the medium Heat from 5 to 7 min Turning them Occasionally to ensure Browning , Until Chicken is no longer Pink in the center.

4- Serve Kebabs as is or with the Mint cilantro Chutney & some Naan Bread .

Indian Chicken Curry (Murgh Kari)

This is a really good recipe for spicy Indian chicken curry. It's pretty easy to make and tastes really good!








Ingredients:



2           Big skinless, boneless chicken breast halves

1           Tablespoon fresh lemon Juice 


1/2        Cup water

1           Teaspoon Graham Masala
 

1           Teaspoons salt

1/2        Cup Olive Oil 

1 & 1/2 Cup Chopped Onion

1            Tablespoon Minced  garlic 

1 & 1/2  Teaspoon Minced Ginger Roots 

1            Tablespoon Curry Powder

1            Teaspoon ground Cumin 

1            Teaspoon Ground Turmeric

1            Teaspoon ground Coriander

1/2         Teaspoon Cayenne Pepper 

1            Tablespoon Water

1            Can Tomatoes  puree

1            Cup heavy Cream

2            Tablespoonfresh Cilantro 

Steps:


1- Sprinkle the chickenbreasts with 2 teaspoons salt.

    2 - Heat the oil in a large skillet over high heat; partially cook the chicken in the hot oil in batches until completely browned. Transfer the browned chicken breasts to a plate and set aside.
      3- Reduce the heat under the skillet to medium-high; add the onion, garlic, and ginger to the oil remaining in the skillet and cook and stir until the onion turns translucent, about 8 minutes. Stir the curry powder, cumin, turmeric, coriander, cayenne, and 1 tablespoon of water into the onion mixture; allow to heat together for about 1 minute while
      stirring. Mix the tomatoes, Heavy Cream 1 tablespoon chopped cilantro, and 1 teaspoon salt into the mixture. Return the chicken breast to the skillet along with any juices on the plate. Pour 1/2 cup water into the mixture; bring to a boil, turning the chicken to coat with the sauce. Sprinkle the garam masala and 1 tablespoon cilantro over the chicken.
        4- Cover the skillet and simmer until the chicken breasts are no longer pink in the center and the juices run clear, about 20 minutes. An instant, read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Sprinkle with lemon juice to serve.

        Homemade Naan


        Naan Bread is basically just an Indian style flat bread..
        It is soft, pillowy, full of lovely bubbles and so extremely versatile. .You can eat this along side of a meal to sop up gravies and Sauces, you can make flat bread sandwiches with it, top it with tomato sauce and cheese for a quick personal pizza, use it in place of tortillas for quesadillas…& so many possibilities!!

        Ingredients:


           2     Teaspoon dry active yeast
            1    Teaspoon sugar
            1/2  cup water
            2 &1/2 or 3 cups flour
            1/2  Teaspoon salt
            1/4  cup vegetable oil  or Olive Oil
            1/3  cup plain greek yogurt
            1 large egg 

        Steps:

        1- In a small bowl, combine the yeast, sugar and water. Stir to dissolve then let sit for a few minutes or until it is frothy on top. At that point, stir in the oil, yogurt and egg until evenly combined.

        2-  In a medium sized bowl, combine 1 cup of the flour with the salt. Next, add the bowl of wet ingredients to the flour/salt mixture and stir until well combined. Continue adding flour a half cup at a time until you can no longer stir it with a spoon (about 1 to 1.5 cups later).

        3-  At that point, turn the ball of dough out onto a well floured counter top. Knead the ball of dough for about 3 minutes, adding flour as necessary to keep the dough from sticking. The dough should be smooth and very soft but not sticky.

        4- Loosely cover the dough and let it rise until double in size (about 45 minutes). After it rises, gently flatten the dough and cut it into 8 equal pieces. Shape each piece into a small ball by stretching the dough back under itself until the top is smooth and round.

        5- Heat a large, heavy bottomed skillet over medium heat and spray lightly with non-stick spray. Working with one ball at a time, roll it out until it is about 1/4 inch thick or approximately 6 inches in diameter. Place the rolled out dough onto the hot skillet and cook until the under side is golden brown and large bubbles have formed on the surface . Flip the dough and cook the other side until golden brown as well. Serve plain or brushed with melted butter.

        Herbs Chicken Sandwich

        Grilled chicken breasts marinated in spices and herbs , This Lebanese recipes Bring the chicken Sandwich to an other Level , Plus it's very easy to make !





        Ingredients:


        1    TBS Mayonnaise
        1    Teaspoon Cumin 
        1    Teaspoon Paprika
        1    Teaspoon Salt 
        1    TBS Oregano
        3    TBS Olive Oil
        Chicken Breasts
        Lettuce Leaves 
        Mustard or any sauce of Your Choice "For example : mayonnaise, mustard and rosemary"
        Olives to decorate if desired 
        Bread of your Choice ( i used Ciabatta Sandwiches Bread)

        Steps:

        1- In a Bowl Mix the mayonnaise , Cumin, Paprika , Salt , Oregano , an Olive oil , Then add the Chicken Breasts , and let aside for 30 min .

        2- Grill your Chicken in outside or indoors Grill , Put a layer of the sauce of your Choice in your Bread then the Lettuce leaves  and the chicken Breast .

        3- Serve with some Salad and Fried potatoes .

        Barbari Bread


        this was actually a very interesting type of Bread , That i had to try when i saw it online, it's called Barbari Bread..a type of Persian flatbread .." Barbari" means "of or related to Barbars" in Persian & the Barbars are a group of people living in Khorasan  near eastern borders of Iran & this bread was baked by them  before it was brought to Tehran, it was popular during the Qajar period.. it's very delicious!

        Ingredients:



        for the Dough:

        2& 1/2 Cup of All-purpose Flour 
        1          Teaspoon Baking Powder
        1           Teaspoon Salt 
        1           TBS Yeast
        Whole Wheat Flour or Corn Meal 
        Sesame Seeds

        For the Glaze:

        1   Teaspoon all purpose Flour 
        1   Teaspoon Baking Soda
        2/3 Cup Water 

        (Bring those Glaze Ingredients to Boil , then turn off the Heat and let cool aside)

        Steps:

        1- Dissolve the yeast with Pinch of sugar in 1/3 cup of warm water, let sit a few minutes to proof (foam).

        2- Mix bread flour (i used the Mixer with the Bread Hooks) , baking powder and salt together. Make a well in the flour, and slowly incorporate the yeast mixture, and then Mix and add Warm water Gradually till you form a Sticky Dough.

        3- Knead 15 minutes  until smooth and elastic.

        4- Sprinkle a large baking sheet with Wheat Flour, transfer the dough to it. Lightly cover and place in a warm place until doubled in bulk for 1 Hour.

        5- Brush lightly the Glaze Mixture over the dough, Dip your fingers into the glaze Again , and lightly punch the dough down with the edges of your hands to form several long parallel ridges along the dough.

        6- Preheat oven to 375°F

        7- Brush the dough with the glaze again, sprinkle with sesame seeds. 

        8- Carefully stretch the dough lengthwise, better to not make your Bread too Thin! as you see i stretch it little bit more than i had to.

        9- Bake 25-30 minutes, or until golden. The bread should be slightly flexible when done.. careful to not over cook it .

        Chili Chicken


        A very popular Indo-Chinese dish, Chili- Chicken is one of the Chinese  food that has been adapted in India. It goes great with rice. 


        Ingredients:


        1       Boneless Chicken Breast Cut into Fingers or medium size Cubes
        4       Garlic Cloves Minced (Divided by 2)
        2       Sliced Chilies 
        2        Seeded and Sliced green medium Capsicum
        2        Sliced medium onions 
        2        TBS  chili Sauce
        2        TBS soy Sauce (Divided)
        1         Egg Beaten 
        1/2      Cup water or Chicken Stock or Vegetable Stock 
        1&1/2Teaspoon Cornstarch Mixed in 1/2 cup of water
        1         Teaspoon vinegar
        3          Mushrooms cut into small cubes ( Optional to add richness to the Dish)
        Crushed Black Peppercorn
        Salt to taste 
        Olive Oil
        Oil to fry

        Steps:

        1-  Marinade the boneless chicken in 1 TBS soy Sauce + 2 garlic Cloves minced + 1 Teaspoon salt .

        2- Dip the chicken in the Egg then in Flour , and deep fry until Golden.


        3- Heat 1 TBS Olive oil in a deep pan add the Onion and the garlic an saute for 1 min add the Mushrooms , the chilies , Capsicums , 1 TBS soy sauce , 2 TBS chili Sauce ,and stir , add the water ( or the chicken/Vegetable stock) Bring the Mixture to boil.

        4- After that Add the Cornstarch/water Mixture , Stir to mix it with the remaining ingredients ,add salt and Crushed Black Peppercorn, let it thicken little bit then add the 1 Teaspoon of vinegar and the fried chicken bites and Toss. 

        5- Bring it to Boil , and serve Hot over Rice .

        Chicken Tikka Masala

        An easy recipe for Chicken Tikka Masala Chicken marinated in yogurt and spices and then served in a tomato cream sauce.




        Ingredients:

        For the Chicken Marinade:

        • 1    Cup yogurt
        • 1/2 Lemon Juice
        • 2   Teaspoons ground cumin
        • 1   Teaspoon ground Cinnamon
        • 2   Teaspoons cayenne pepper
        • 2   Teaspoons freshly Ground Black Peppers
        • 1   TBS minced fresh ginger
        • 4   Teaspoons salt, or to taste
        • 3   Chicken breasts, cut into bite-size pieces
        4   Long skewers

        For the Sauce:

        1 Tablespoon butter
        • 1 Clove garlic, minced
        • 1 Jalapeno pepper, finely chopped
        • 2 Teaspoons ground cumin
        • 2 Teaspoons paprika
        • 3 Teaspoons salt, or to taste
        • 1 Can tomato sauce
        • 1 Cup heavy cream

        Steps:

        1- In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, Ginger and  salt. Stir in chicken, cover, and refrigerate for 1 hour.



        2- Preheat a grill for high heat.


        3- Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.


        4- Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. 

        5- Serve hot over Steamed Basmati Rice

        Curry Rice

        In this rice dish, green & Red Peppers give great colors, & the mild curry flavor pleases all palates.






        Ingredients:

        2         Cups Basmati Rice 
        4         TBS butter or Olive oil
        1          Medium chopped Onion
        1/2       Chopped green pepper
        1/2       Chopped red pepper
        1          TBS tomato paste
        1&1/2  Curry powder
        1          Teaspoon Turmeric
        1&1/2  Teaspoon Salt 
        3           Cups vegetable stock
        1           Cup Green peas 

        Steps:


        1- Wash the rice by water twice , let it rest in warm salted water for 20 min.

        2- Over medium heat , heat the olive oil in the Pan , Add Onion , saute for 5 min , then Add the green and the Red Peppers , Add the Tomato Paste and the curry powder, Salt & the Turmeric 

        3-Drain your Rice From the water , Add to the First Mixture and stir.

        4- Add the water , and reduce the Heat , Cover your Pan and let your Rice cook for 15 min.

        5- After that Wash the peas in warm water and Add them over your Rice, Cover and let it Cook for an other 10 min & Serve Hot.

        Chicken Shawarma



        Awesome Lebanese & Syrian sandwich served in most restaurants.

        Ingredients :

        (for 4 Servings)

        2  boneless, skinless chicken breasts (thinly cut)
        1  Yellow Onion (thinly cut) Divided on 2
        2  TBS Olive Oil
        2   Garlic Cloves 
        4   Pita Bread or Tortillas
        1  Teaspoon Shawarma Spice:

        1 Teaspoon ground Cumin
        1 Teaspoon Ground Coriander
        1 Teaspoon Garlic Powder
        1 Teaspoon Turmeric
        1 Teaspoon Ginger
        1/2 Teaspoon Paprika 
        1/2 Teaspoon Ground Gloves
        1/2 Teaspoon  black Pepper
        1/2 Teaspoon  Cinnamon 
        1/2 Teaspoon  Salt

        1 Cup Plain Yogurt
        1 Tomato ( thinly Cut )
        kosher spears Chopped
        Shredded lettuce Leaves 
        Salt & Pepper to Taste 

        Steps:

        1- Grind the 2 Cloves of Garlic in the Yogurt add Salt and Pepper and set aside.

        2-On Medium Heat poor Olive Oil onto Skillet add chicken and the 1/2 quantity of the Onion and Teas Spoon of the Shawarma Spice ..   keep Stir  & Cook for 20 min or Until the Chicken is Cooked.

        3- in a Warmed Tortilla put a layer of the (Yogurt and Garlic Mix) then a layer of lettuce and Chicken then add some onion and tomato and the Kosher Spears .

        P.S you can keep the shawarma Spice in spice jar well closed so you can use it again.
