Creamy Chicken Soupe

This is the Best Chicken Soup i Ever made until now  so Creamy and Healthy In Cold Weather !!







Ingredients:


    1    Tbsp olive oil
    1    Medium yellow onion
    1   Tbsp minced garlic
    1/2 lb. carrots, sliced
    1/2 bunch celery, sliced
    1    lb. chicken
    1    whole bay leaf
    1    Tsp dried oregano
    1    Tsp dried thyme
    to taste cracked pepper
    1-2 Tsp (to taste) salt
    1    Cup Brown rice 

    6   Cups water
   1/3 bunch fresh parsley

 for the Creamy Mix:
    2   Tbsp butter
    2   Tbsp all-purpose flour
    2   Cups whole milk

Steps: 

1- Heat the olive oil in a large pot over medium heat. Meanwhile, dice
the onion (and mince the garlic if using fresh rather than pre-minced). Add the onion and garlic to the hot oil and saute until tender (5 min)

 2- If using fresh carrots and celery, clean and slice them while the onions are sauteing. Add them to the pot and cook for about 5 minutes more.
  3-  Add the chicken breast (whole), bay leaf, oregano, thyme, cracked pepper, dry rice, and 6 cups of water to the pot. Do not add salt yet. Bring the pot up to a boil over medium high heat, then reduce the heat to low and let simmer for one hour.

 4-  Near the end of the hour, begin to make the creamy milk mixture. In a small pot, melt 2 Tbsp of butter over medium heat. When it is fully melted, whisk in 2 Tbsp of all-purpose flour. Cook and stir the butter and flour mixture for two minutes. Whisk in the milk and allow it to come up to a simmer, whisking occasionally to keep it from scorching on the bottom. Once it reaches a simmer, it will have thickened slightly.
5- Carefully remove the chicken pieces from the soup and shred or dice with a knife and fork. 

6- Rinse and chop the parsley. Add the parsley and the thickened milk mixture to the soup. Season with salt to taste. I used about 2 tsp of salt, but start with a little and add more as needed. I also added a touch more pepper at this point. Serve hot!

Asian Shrimp Noodle Soup


this is a Simple , Fast , Delicious and Healthy Recipe! 
Fun to eat it with the Chopsticks.









Ingredients:

Cabbage
Rice Noodles
Green onions 
Shrimp
Seaweeds cut into Small Peaces ( i used the Ito-Wakame branches)
Olive Oil
1 TBS soy Sauce
1  Bay leaf
2  TBS ground Ginger root
Salt & Black Pepper to Taste
5-6 Cups of Chicken or vegetable Stock


Steps:

1- Soak your Rice Noodles in warm water 

2- in a pan put some olive oil & Saute your green onions , Cabbage  then add your shrimp , Ginger root , Bay leaf ,Salt and Pepper , your Chicken or vegetable Stock , rice Noodles and bring to boil over medium heat  for 15 min then add your seaweeds and Soy Sauce , let boil for an other 5 min.

3- Serve Hot .

Harira Soup

Harira is a famous Moroccan soup,it's especially popular in Ramadan as one of a wonderful comfort food. It's easy to make, delicious and healthy! 



Ingredients:


1/2  Lb Meat balls (or Beef chunks) 
1     Cup chopped celery 
1/2  Cup lentils
1      Cup chickpeas
1      Small chopped Onion
1/2   Cup chopped Cilantro
1/2   Cup parsley
1      Teaspoon Pepper
1      Teaspoon  Salt 
1/4   Teaspoon cinnamon
1/2   Teaspoon Ginger
1      Teaspoon Turmeric 
1/2   Teaspoon Saffron
3      TBS olive Oil
1L    Water
For Later:  3TBS Flour , 1/2 Cup water , 2 TBS tomato Paste ,1/2 Cup water , 2 TBS vermicelli or Rice (or both) , 3 Big tomatoes in puree .


Steps:

1- On a low Heat put oil into a Large Pan , add Meat balls , Onion , lentils , chickpeas .

2- Mix tomatoes puree with celery in the blender to grind the celery little bit .

3- Add the Mix into the Pan , stir and add the spice then cook for 5 min and add water 

4- let boil over medium Heat till the Lentils & Chickpeas are cooked .

5- Mix 1/2 Cup water with the tomato paste and add into the boiling Soup with the 2 TBS vermicelli or Rice (or both) .

6- Mix the flour and 1/2 Cup water and whisk in a small bowl .

7- Add the Flour and the water mixture and cook for 20 min , keep stirring slowly from time to time a foam from the tomatoes will appear into the surface try remove it each time ,stir and cook till the tomatoes stop Foaming .

PS: (Add an egg while stirring if desired ) Optional.
         If you use conserved chickpeas Add them at the end with the vermicelli . 
         If you are a vegetarian you can skip Adding the Meat for this Soup.

Italian Soup

This Recipe is From "Unity Inn Healthy recipes", I    add some other Vegetables to it to make it more Rich.






Ingredients :



1    Quart Vegetable stock (Or just water) = 250 ml
1    Can Diced Tomatoes 
1    Onion 
1/3 Cup Flour
Small Bay leaf 
3     Sprigs thyme
1/4  Cup Carrot
1/4  Cup Celery
1/4  Cup Peas 
1/4  Cup sweet pepper
3     TBS Black or White Beans
1      Cup Macaroni (Boiled & Drained)
3      Cloves
3      TBS butter
Salt and Pepper to Taste 

Steps:

1- Cook the Onion and Celery in the Butter for 5 min
2- Add Flour , bay leaf , cloves and thyme & cook for 3 min
3- Add Diced tomatoes , Peas , Carrots ,  Vegetable stock and cook for one Hour , on reduced Heat.
4- Add the Beans and the Macaroni  with some Salt and Pepper at the last and turn off the Heat.
5- let it rest 10 min before Serving .

Garnish with some cilantro leaves and cheese if Desired.
