Cherry Pie

Very popular dessert in North America , The Cherry pie was most commonly eaten in midsummer, you can always control the sweetness in The recipe .Enjoy!

Ingredients:

2 Cans of "Food-Club Cherry pie Filling"
1 TBS Almond extract 

Or for preparing the Cherries yourself You need :

 2         Cups pitted sour cherries
 1&1/4 Cups white sugar
 10       Teaspoons cornstarch
 1         TBS butter
 1/4      Teaspoon almond extract 

Pie Crust Dough 

Steps:

1- Roll out  disk of dough into a 11-inch circle pie pan with pastry.

2- Place the cherries, sugar, and cornstarch in a medium-sized non-aluminum saucepan. Allow the mixture to stand for 10 minutes, or until the sugar draws out the cherries' juices. Bring to a boil over medium heat, stirring constantly. Lower the heat; simmer for 1 minute, or until the juices thicken and become translucent. Remove pan from heat, and stir in butter and almond extract. Allow the filling to cool to lukewarm. Pour the filling into the pie shell.
(If it's the Food club cherry pie filling Cans stir them with more sugar if you desire more sweetness otherwise they are ready to use after adding the Almond extract).
3- Bake in a preheated 375 degree F (190 degree C) oven on the baking tray for 45 to 55 minutes, or until the crust is golden brown. Allow to cool for several hours before slicing.

Sweet Pie Crust

I like this recipe for Pie Crust , it taste Delicious!






Ingredients:

(for 11 inch Pan)


1 & 1/2 Cup all Purpose Flour 
6           TBS Butter (in room temperature)
1           Egg
1/2        Cup Sugar
pinch of Salt 
Enough Cold water to Form  Dough

Steps:

1- In Large Bowl pour the Flour , The Sugar , Salt , and work with your finger tips the Butter till you get a sandy Mixture. 

2- Add the Egg and try to Form the Dough , Add drops of cold water to form it if the Egg was not Enough to do That .

3- Wrap in plastic and refrigerate until chilled through, 30 minutes .

4- Roll out one disk of dough into a 11-inch circle. Line a 11 inch pie pan with pastry. Refrigerate until needed or use immediately .

A simple mushroom spinach pizza

much better than takeout pizza! i made this recipe as a quick Dinner for tonight it was a hit!





Ingredients:



1    Cup mushroom, sliced
1/2 Cup Spinach Chopped
1    Cup Mozzarella shredded cheese 
1/3 Cup finely shredded parmesan blend
1/4 Cup cheddar cheese shredded 
  Pizza Sauce (Got the one Ready from The store)
  Homemade Pizza Crust (Click Here)
  Italian herbs

Steps:

1- Preheat the Oven at 400F 

2- Top the crust with The Tomato Sauce , Then the Sliced Mushrooms and the Chopped Spinach.

3- Add the Mozzarella Cheese , the Finely shredded Parmesan blend , and the Cheddar Cheese .

4- Sprinkle with some Italian herbs and cook for 10-15 min

Dough for Pizza Crust

This is Very good Recipe for Pizza Crust , Thin or Fat Crust this Dough will Always work for you !



Ingredients:

(To make 2 Pizza Thin Crusts)



2  Cups All-purpose Flour
1   TBS Sugar
1   TBS Olive Oil 
1    Teaspoon Salt 
1/3 Cup Warm Milk
1    TBS Pizza Yeast 
Warm Water to get the Dough

Steps:

1-  in Large Bowl Combine Flour , Make a well in the center Pour Sugar, The yeast , olive oil and The warm Milk and let rest for 10 min .

2- pour enough water to get a smooth Dough , let raise for 1 Hour. 

3- Put some Oil on your Hands & Divide the Dough on 2 Balls, Spread Each one onto a Circle on a Lightly Oiled Pizza pan or onto a pizza stone with a rolling pin (sprinkles with Flour).

4- Preheat the oven at 300 F and Cook for 10 min , (it must be Cooked Halfway Through) let it cool before refrigerate Until the use or Use it Immediately .

P.S: to get a Fat Crust Don't Divide the Dough But Spread all of it onto the Pizza Pan.

Quesadillas

A Quesadillas is a flour tortilla or a corn tortilla filled with a savoury mixture containing cheese and other ingredients, (often) then folded in half to form a half-moon. This Homemade recipe is tasty and easy to prepare !.



Ingredients:

Chicken Breast cut into Cubes
Onion cut into julienne
Green Peppers cut into Julienne
Mexican Cheese Blend
Juice of 1/4 Lemon
Paprika
Black Pepper
Garlic Powder
Salt to taste 
Olive Oil
Butter
Flour Tortillas

Steps:

1- Mix the chicken cubes , with the seasoning (Paprika, Black Pepper, Garlic Powder, Salt , Olive Oil, and the lemon Juice ), & Preheat skillet over medium heat ,Add some 1TBS of Olive oil if needed  & Cook the Chicken .

2- Cook the Onion and the green Peppers in Julienne , for 5 min or less , they should be Crispy still.

3- One at a time, melt a peace of Butter into hot skillet and lay tortilla, Reduce the Heat , sprinkle with 1/4 cup of  shredded Mexican cheese , then 1 TBS of chicken Breast , Add Some Green Peppers and Onion In Julienne , fold your Tortilla  and press gently with spatula , Flip to let Lightly Brownish from both sides .

Cinnamon walnuts granola


very nutritious cinnamon walnuts granola flavor (with raisins) but you can use whatever nuts (or no nuts) and whatever fruit (or no fruit) that you want.


Ingredients:


4    Cups rolled oats
1    Cup walnuts 
1/4 Cup ground flax seed
1/4 Cup Brown Sugar
1/4 Cup Honey 
2    TBS vegetable Oil
1    Teaspoon Cinnamon
1    Teaspoon Vanilla
1/2 Teaspoon Salt 
1/2 Cup Raisins

Steps:


1- Preheating the oven to 325 degrees, In a large bowl combine the rolled oats, ground flax-seed, and walnuts (roughly chopped), Stir until combined.

2- In a small saucepan, combine the honey, brown sugar, oil, salt, and cinnamon, Cook over low heat while stirring until the brown sugar is dissolved,Turn off the heat and stir in the vanilla.

3- Pour the honey mixture over the dry oat mixture. Stir well until all of the oats are coated.

4- Pour the mixture out onto a baking sheet covered in parchment paper, Spread it out into an even layer.

5- Bake the granola in the oven for 30 minutes, stirring half way through, Keep an eye on the granola as every oven is different, If it begins to smell burned, remove from the oven immediately, You want the granola to toast, but not burn.

6- Remove the granola from the oven , add the Raisins and Press,The granola will feel soft when it is hot, but will crisp up and become crunchy as it cools, After it cools, store in an air-tight container.

Orange Chicken

Orange chicken is a popular Chinese take-out dish, of Hunan origin, this recipe is Simple and easy to make , Also delicious with Rice.

Ingredients:

(for 2servings)



1    Chicken Breast cut into medium cubes 
1    Egg
1/2 Cup All Purpose flour 
1    Teaspoon Salt 
1/2 Teaspoon Black Pepper
Oil for Frying 

for the Sauce:

1    Cup water
2    TBS soy Sauce
1/4 Cup Orange Juice
2    TBS Vinegar
3    TBS Brown Sugar
1    Garlic minced 
1/3 Cup green onion divided
1/2  Cup water + 1 Teaspoon corn starch

Steps :

1- Heat your oil to fry your Chicken. 

2- Mix 1 Teaspoon of salt and Black pepper with the flour in plastic container , and beat the Egg in small bowl. 

3- Put your Chicken in the beaten Egg then stir in the Flour Mixture to Coat and deep fry the Pieces till Golden Brown.

4- Remove chicken from oil with slotted spoon and drain on paper towels , set aside.

5- in a pan pour the 1 Cup water , Add the soy sauce , vinegar , Orange Juice , Minced garlic , half of the Green onion and the Brown Sugar , Bring to Boil then add the 1/2 Cup of water and Corn starch Mixture and let boil till it thicken.

6- Add the Chicken pieces to the boiling mixture and let it cook for 5 to 10 min or till it become more thick.

7- serve over or with rice and garnish with the green onion left.

Pasta with Italian Meatballs

Nothing better than those Classic Italian-American style meatballs, huge, pillowy soft and loaded with herbs and cheese, mixed with ground beef on your pasta Dish with savory tomato Sauce.


Ingredients:

For ten Meatballs:

1/2 Pound ground beef 
3   TBS Ground Bread Crums 
1/3Cup grated parmesan cheese
1   Small Egg
1   Teaspoons salt
1/2Teaspoon Black pepper
1   TBS chopped fresh parsley
2   Teaspoons black pepper
1   TBS chopped Onion 
1   Small Garlic clove, minced
About 1/2 cup of flour for dusting
1/4 cup olive oil.

For the Tomato Sauce:

1  Can tomato Sauce 
1  Clove Garlic Minced
1  TBS Basil finally Chopped
1  Teaspoon Salt 
1   Pinch of Black Pepper

Steps:

1- In a large bowl, combine the beef, grated Parmesan, eggs, salt & Black Pepper, parsley,  black pepper, garlic cloves , Onion and the bread . Mix it well with your hands until it barely combines. Don't overwork the mixture or it will become tough.

It is OK to have some discernable bits of bread or meat in the mix, better that than overworked meatballs. 

2- Wet your hands and form the meatballs. A traditional size for this sort of meatball is 2-3 inches across, but you can make them any size you want. Once you roll the meatball in your hands, roll it in the flour to give it a good coating. Set each one on a baking sheet as you work. You might need to rinse your hands a few times as you make the meatballs.

3- When all the meatballs are formed, heat olive oil in a large skillet over medium-high heat. Brown the meatballs on at least two sides. & Don't worry about the center getting cooked through, as you will finish these in the sauce.

4- Once all the meatballs are browned, remove them and Put the minced Garlic in the remaining Oil of the meat balls , once cooked little bit pour the tomato Sauce and let thicken little bit then add the Basil and the meatballs , Salt and black Pepper to taste and Cover ,let simmer on low heat for 15 more min.

5- Serve on pasta, and garnish with some cheese and green onion if you want.

Ma'akouda or Moroccan Potato Patties

Ma'akouda, similar to the potato latke is a dish well known in Essaouira the Moroccan city. This can be served as an appetizer or made into a sandwich with some tomato Sauce and lettuce leaves .



Ingredients:

1    Pound of potatoes, peeled and diced
1   TBS of finely chopped cilantro
1    TBS of finely chopped parsley
1    Teaspoon of cumin
1    Teaspoon of salt
1/4 Teaspoon of pepper
1     Egg
1/2  Minced garlic cloves

Mix :1 Cup Flour, 1 Cup water , 1 Teaspoon baking Powder, Pinch of turmeric & salt  and set aside .

Oil for frying

Steps:


Preparing the Potato Mixture




1- Cook the potatoes in boiling water until they become soft.

2-  Once the potatoes are cooked, drain them from the water.

3-  Mash the potatoes with a fork or a manual potato masher.

4-  Add the parsley and cilantro, egg and garlic and splices to the potatoes. If you like spicy food you can add hot chile pepper to the potatoes.

5- Make small patties out of the potato mix.

Frying the Ma'akouda

1- First heat the oil in the skillet

2- Dip the potato patties in water and flour with the baking Powder, salt and turmeric thick Mixture and then fry them. Make sure the oil is very hot before frying so they don't absorb so much oil or melt .

3- Cook the Ma'akouda until it becomes golden brown and use paper towels to absorb the excess oil.

4- Serve the Ma'akouda immediately. You can serve it as an appetizer or as the way it is sold on the streets in Morocco as a sandwich using bread or Moroccan bread lettuce, tomato and hot sauce.

P.S you can always refrigerate it and reheat whenever you like.

Baked Oatmeal

What is baked oatmeal and why is it different than regular old boiled oats?, the difference is that the Baked Oats are thicker on their texture , i tried today Baked oatmeal recipe which is very Healthy and rich .

Ingredients:

1/2       Cup Blueberries 
1           Apple cut into cubes ( you can use more)
1          Cup Plain Yogurt
1&1/2  Cup milk
1           Large egg
1/4       Cup Brown Sugar
2          Cups Old fashion Oats 
1/2       Teaspoon Baking Powder
1/4       Teaspoon Baking Soda
1/4       Teaspoon Salt 
1          Teaspoon Ginger
1/4       Teaspoon Cinnamon


Steps:

1- Preheat the oven to 350 degrees. Clean the Apples and cut them into cubes. Place the Apples cubes and blueberries in the bottom of an 8x8 baking dish coated with non-stick spray.

2- In one bowl, whisk together the wet ingredients (milk, yogurt, egg, sugar), In a separate bowl, stir together the dry ingredients (oats, baking powder, baking soda, salt, ginger, cinnamon), Combine the two bowls and stir until evenly mixed. Pour the mixture over the fruit in the baking dish.

3- Cover the dish with foil (to keep the moisture in and steam the oats) and place in the preheated oven. Cook for 20 minutes. Remove the foil at 20 minutes and continue to bake until the top is golden brown (about 25 minutes more).

4- Serve warm with cold milk, whipped cream, vanilla yogurt or just plain.

PS: I used a very minimal amount of sugar here. If you want a richer, more decadent, dessert-like baked oatmeal, double the brown sugar.

Also This dish can be refrigerated and eaten either hot or cold throughout the week.

Meatballs Sandwich

Meatballs in tomato sauce with melted cheese on a lightly toasted baguette.
Delicious and not messy at All!





Ingredients:



for the Meatballs:

1    Lb Ground Beef
1/4 Cup Bread crumbs 
1    Egg
1    TBS Dijon Mustard 
1    Teaspoon Paprika
1    Teaspoon Garlic powder
1/4 Cup Olive Oil
Salt and Pepper to taste

For the Marinara Sauce:

1    Cup sliced Mushrooms
1/2 Cup sliced Onion
1/2 Cup Sweet red pepper
2    Cloves of garlic Minced 
1    Cup Tomato sauce
1    Teaspoon Italian herbs ( or the Herbs of your Choice)
Salt and Pepper to Taste

Mozzarella Cheese & Baguettes to Form your Sandwich.

Steps:

1- In a Bowl Combine the Ground Beef , Bread Crumbs , Egg , Mustard , Paprika , Garlic , Olive Oil , Salt and Pepper.

2- Form balls with 1 Teaspoon and 1/2 of Ground beef mixture for each.


3- In a Pan Cook the meat balls on 1 Tbs Olive Oil till they are Golden Brown then remove them.

4- In the same pan Cook the Mushrooms , sweet red Pepper , Onion , Garlic then add the tomato sauce and the meatballs Bring to Boil,  reduce the heat and Cover and let cook for about 15 min.

5- in your Bread Sandwich put the meat balls then pour some of the Sauce over them and Mozzarella Cheese , put it in the oven to toast and to allow your cheese to melt.

Home-made Baguettes

the famous French bread means 'stick' or 'wand' in French , Very delicious and Crispy used in making several sandwiches , This recipe is very Good and Easy to realize at Home.

Ingredients:


2 Cups All purpose Flour
1 TBS Bread Yeast
1 Teaspoon Salt
1 Teaspoon Sugar
1 TBS Olive Oil
1 Cup warm water to Form the Dough

Steps:

1- In Large Bowl Combine Flour and Salt , Olive oil , make a well at the center and pour the Yeast , Sugar and some warm water , cover and Let it rest for 15 min

2- when the Yeast form a foam start to mix with your finger tips and add more water little by little, till you get a smooth dough start to knead for some min ( it should not be hard dough).

3- Cover and let raise for 1 Hour 

4- After that form 5 equal Balls 

5- make a circle from each one and Follow the Pictures steps Folding to form your Baguettes 


6- Sprinkle each Stick Formed with Flour & Cover and let raise for 30min 

7- Preheat the oven at  480F for 15 min and Put a pan full of water inside 

8- make wounds on your Baguettes and spray with water, and put them in the oven to Cook for 15 min , Drop the Oven temperature to 425F and Spray your Bread again with the water and let them continue Cooking for an other 10 min .
