Sour Cream Chicken Enchiladas

Easy to assemble & delightfully Creamy Recipe! 


1/2 Lb Diced Chicken Breast 
1/2 Medium Chopped Onion
1    TBS olive Oil
4    Soft Flour Tortillas 
1    Cup Grated Monterey jack cheese or 1Cup Mexican blend Cheese divided
1/4 Cup Butter
2    TBS Flour
1/2 Cup Sour Cream 
1/2 Cup water or (chicken Broth)
1/2 Cup chopped Green chili


1-In a fry-pan , cook Chicken and Onion together in Olive Oil over a medium heat until chicken is just Done, Add Salt and Pepper to Taste. 

2-Divide the Chicken and the onion Mixture between the 4 Tortillas add a 1TBS cheese to each one .

3-Roll enchiladas and place them in a baking dish that has been lightly sprayed with a No-Stick cooking spray.

4-In a Saucepan Melt the Butter Stir in a Flour , Stir and Cook until bubbly , gradually whisk in chicken broth or (water), Add salt and Pepper and bring to boil , stirring frequently.

5-Remove from heat and stir in Sour Cream and the Green chilies , pour the Sauce evenly over enchiladas.

6-Top with remaining cheese , and bake at 400F for 30 min until the cheese is melted and become Golden and bubbly.
